When you are a kid, there is nothing more exciting than getting the mail. My grandparents would always give me junk mail, which was so exciting, until I realized it was just junk. Then as you get older, you appreciate junk mail more because it’s not a bill. Such is life of the adult.

Any time there is a box in the mail, that’s cause for extra excitement, I was super stoked to get this in the mail from the lovely people at Kelapo.

When they contacted me, as an avid coconut oil lover, to try their product and I was excited. And when they agreed to offer a jar of their product to one of my readers, I was extra excited!

Their coconut oil is definitely the creamiest that I’ve tried. It’s also the only brand I’ve tried that is both organic and fair trade, which is fabulous. I usually use it in my smoothies and have lately been relying on it to lend some great flavor to cream cheese icing as well. I decided to kick it up a notch and take it for a whirl in pie crust, with two of my summer favorites- strawberries and rhubarb.

To be fair, this isn’t a new recipe. It’s a throwback to a summer staple I posted a couple of years ago, but with a twist.

This is my standard Strawberry Rhubarb Pie recipe. What I did do differently, though is use 2 tbsp. less oil and splash more water in the dough. Then I divided the dough in half and returned half of it to the food process (my pie crust maker extraordinaire) and added 1/4 cup sugar and 1/3 cup oatmeal for the crumble topping.

Let me just say that baking with coconut oil smells heavenly. It’s so amazing. And the crust was tender and buttery and delightful. Next up I want to try making some raw fudge. Any suggestions?

    Sigh, I am just going to have to buy another copy of Have Your Cake since I didn’t win and still can’t find my book. :( Congrats Heather! Enjoy! It’s fantastic… I’m trying for the coconut oil this week. It’s a little too pricey for me to buy for myself so this would be a treat!

    I really enjoy baking with coconut oil. There’s a certain flavor that you get as well… Combined with the smell when it’s baking… It’s so wonderful!

    Oooooh, what a fun giveaway! I love using coconut oil for making pancakes and cinnamon roll dough. I even use it to make my own deodorant!

    I’ve begun to enjoy baking with coconut oil as well. It must be the buttery flavor it gives to baked goods. The pie looks scrumptious, by the way. I’m all about that oatmeal crumble topping mmmmm…

    Organic and fair trade? Nice! I’ll have to ask my local food co-op to start carrying it. In the meantime, I’d sure love to win a jar – which I could bring to the co-op if they need any convincing. :)

    I hope I can get my hands on some rhubarb soon… With everyone sharing their yummy-looking rhubarb recipes, my cravings are only getting worse!

    I used to love to open junk mail too, lol. I could never understand why my mom referred to it as “junk” mail…it was mail! It was fun to open! Hand it to me!! If only we were so easily entertained and cheered up as adults… :-)

    What a beautiful pie! Makes me want to stop by your house for dessert and stay for – EVER. Ideas for raw fudge … well, when I was a child my Dad always gave me loads of candy (awful, I know) and Mounds was one of my favorites. Creamy dark chocolate and coconut – yum! One of my friends also made an amazing-looking chocolate coconut bark for Christmas two years ago, that would be lovely too. Knowing you, you can always mix it up. Mounds in a muffin for breakfast anyone? :-)

    Mmmmm I just used some coconut oil to grill some pinapple rings on the BBQ, SO YUMMY! I was licking the pineapple and coconut oil off my fingers, mmm… must make smoothie.

    Oh, I would love to try Kelapo brand of coconut oil. I absolutely LOVE Coconut Oil, I use it for cooking, baking, and moisturizing (great for the legs, feet. knees and elbows).
    I use it for all my baking, just sub the oil for coconut oil. It works great on muffins, cakes, even on homemade graham crackers, coconut oil is amazing in the kitchen. And I agree with you, it smells so good! :-)
    I can only imagine how it would taste in fudge, I need to try that!
